The answer is mainly found in the type of sugars naturally present in palm nectar and the way our body processes them.
Palm blossom nectar has a low glycaemic index mainly because of its natural sugar composition.
Unlike pure glucose, palm nectar contains a mixture of sucrose, glucose, fructose and other naturally occurring carbohydrates. These sugars are digested and metabolised differently, resulting in a more gradual effect on blood glucose.

First, What Does Low GI Mean?
The glycaemic index, or GI, measures how quickly a carbohydrate-containing food raises blood glucose after we eat or drink it.
Foods are generally classified as:
- Low GI: 55 or below
- Medium GI: 56–69
- High GI: 70 or above
Pure glucose has a very high glycaemic response and is normally used as the reference with a GI of 100.
A low-GI food releases glucose into the bloodstream more gradually, producing a slower rise in blood glucose compared with a high-GI food.
Low GI does not mean sugar-free. It simply describes how the carbohydrate affects blood glucose after consumption.
Palm Nectar Contains Different Types of Natural Sugars
Palm blossom nectar does not contain only glucose.
Depending on the palm species, fresh nectar contains different proportions of:
- Sucrose
- Glucose
- Fructose
- Small amounts of other carbohydrates
This mixture is important.
Glucose can enter the bloodstream quite quickly. Fructose, however, follows a different metabolic pathway. Much of it is first processed in the liver rather than directly appearing as glucose in the bloodstream.
As a result, fructose has a much lower immediate glycaemic response than glucose. Human studies consistently show that fructose produces a smaller rise in blood glucose and insulin than an equivalent amount of glucose.
Sucrose also contains both glucose and fructose. It must first be broken down before these sugars can be absorbed.
The natural balance between these different sugars is therefore one of the main reasons some palm-derived sweeteners can have a lower GI than more rapidly absorbed carbohydrates.
Why the Sugar Composition Matters
Palm sap is more than a simple solution of purified sugar.
Depending on the species and processing method, it can contain small amounts of oligosaccharides and other naturally occurring carbohydrates in addition to sucrose, glucose and fructose.
These components may influence how quickly carbohydrates are digested and absorbed.
This is very different from refined white sugar, which is almost entirely purified sucrose.
However, the exact composition is not identical between nipa, coconut and arenga palms – or even between two harvests from the same species.
Less Refined Than White Sugar
Refined white sugar goes through several processing and purification steps until most components other than sucrose have been removed.
Palm blossom nectar can retain some of the naturally occurring substances found in fresh palm sap, including:
- Minerals
- Organic acid
- Amino acids
- Phenolic compounds
- Small amounts of vitamins and other plant compounds
These nutrients make palm nectar nutritionally more complex than refined sugar.
It is important, however, not to misunderstand their role: minerals and vitamins themselves are not the main reason palm nectar has a low GI. The carbohydrate profile and how those carbohydrates are digested and metabolised are much more important.
Coconut Blossom Nectar Has Been Tested as Low GI
Coconut blossom products are among the better studied palm sweeteners.
One human study of coconut inflorescence sap powder measured a GI of 52.47, placing the tested product within the low-GI range. Other published literature has also reported relatively low GI values for coconut sap products.
This does not mean every coconut nectar will have exactly the same GI.
The result can change depending on the coconut variety, composition of the sap and how it is processed.
The same principle applies to nipa and arenga nectar.
Why GI Can Be Different From One Palm Nectar to Another
The GI of a palm nectar is not determined by the name of the palm alone.
It can be influenced by:
- Palm species and variety
- Ratio of sucrose, glucose and fructose
- Growing conditions
- Stage of the flower stalk
- Harvesting method
- Natural fermentation
- Heating and concentration
- Storage
- The final recipe in which the nectar is used
For example, fresh nectar and heavily concentrated palm syrup are not chemically identical products.
Low GI Does Not Mean No Sugar

A low glycaemic index does not mean:
